Cheesecake
Ingredients (8-10 servings):
200 g Digestive biscuits
100 g melted butter
600 g cream cheese
200 ml heavy cream
150 g sugar
3 eggs
1 tsp vanilla extract
Lemon zest (optional)
Red fruit jam for topping (optional)
Preparation:
Preheat the oven to 170 °C.
Crush the biscuits and mix with melted butter. Press into a springform pan to form the base.
In a large bowl, beat cream cheese with sugar until smooth.
Add eggs one at a time, then cream, vanilla, and lemon zest. Mix well.
Pour mixture over the biscuit base and bake 40-45 min until slightly firm in the center.
Cool, then refrigerate at least 4 hours before removing from the pan.
